    Question Feijoa Cake Recipes

    Hello darling NZBers,

    It is my birthday next month and I LOVE feijoas. I have my own tree in my garden which has done quite well, and I have a few spare I was thinking of freezing so I can have them on my birthday next month.

    I liked the idea of a spiced feijoa cake but don't have a recipe.

    Can anyone out there help?

    Hmm.

    You could probably get away with substituting finely shopped feijoas for either banana or carrot in their respective cakes.

    They are way sweeter than bananas though, so you'd want to cut back on the sugar there.

    Here's a recipe I found:

    Feijoa Cake Recipe

    Ingredients
    1/2 cup milk
    2 eggs (beaten)
    1 cup white sugar
    1 cup mashed feijoas
    1 tsp vanilla essence
    75 grams butter, softened
    2 cups flour
    1 tsp baking powder
    1 tsp baking soda

    Method
    1. Cream the butter and sugar, blend in the feijoa.

    2. Heat the milk, add the baking soda. Add to the mixture above, along with the eggs and vanilla essence.

    3. Sift the flour with the baking powder, mix into the wet ingredients.

    4. Pour into a greased and baking paper-lined 20cm cake tin and bake at 180°C for 40 minutes.

    Ice with cream cheese icing if wished.

    Cream Cheese Icing

    200g Cream Cheese
    200g Icing Sugar
    1 T butter
    some lemon juice

    Beat Cream Cheese until soft, add icing sugar, lemon and butter. Blend till smooth.

    I made what was the second ever carrot cake in my life the other day for the sparkley one's birthday, and it was spectacular.

    Heres a bunch of recipes I got for feijoas a while back.. I've made the jam, its yum! Also if you chop all the feijoas up skins and all, and add in a lil less sugar it makes a yummy chutney


    Feijoa Facts!

    - Also know as the pineapple guava and has its origins in southern Brazil.
    - The fruits drop when ripe.
    - Tastes a bit like a guava, strawberry, pineapple and mint.
    - The flowers can be eaten, and are great in mixed salads.
    - Excellent exfoliate - but I still haven't found a recipe so if anyone has one, could you please share.
    - Oil from the fruit is being researched as a perfume base.
    - Feijoas contain high levels of Vitamin C and one feijoa will provide a quarter of an adult's recommended daily fibre requirements.


    Feijoa crumble cake

    Shopping list
    100g butter
    75g brown sugar
    1/2 tsp vanilla essence
    2 large eggs
    150g plain flour
    1 tsp baking powder
    Pinch of salt
    1/4 cup milk
    2 cups of peeled and roughly chopped feijoas

    Cake topping
    1 cup shredded coconut
    1/2 cup brown sugar
    30g butter, cut into cubes.
    Mix well to combine.

    Method
    - Preheat oven to 180c
    - Line and grease a 22cm round cake tin with baking paper
    - Cream butter and sugar until light
    - Add vanilla and eggs one at a time
    - Sift together dry ingredients and add to mixture with milk.
    - Fold in feijoas
    - Pour into baking tin and sprinkle top with well combined crumble topping
    - Bake 50 to 60 minutes until golden
    - You might need to cover top in last 15-20 minutes of cooking to stop browning

    Serve with thick Greek yoghurt.


    Chicken feijoa curry

    Shopping list
    Olive oil
    2 chicken breasts, skins removed and cut into bite-sized chunks
    2 carrots, finely sliced
    1 green and 1 red pepper, finely sliced
    1 large red onion, cut into rings
    2 cloves garlic, finely sliced
    5 feijoas peeled and cut into thick strips
    1 tbsp curry powder
    1/2 tsp allspice
    1/2 tsp grated black pepper
    1 tbsp freshly grated ginger

    1 tbsp cornflower
    2 cups chicken stock or 1 cup stock and 1 cup lite coconut cream
    1/4 to 1/2 Chilli kelp seasoning

    Method:
    - Into a heavy based pot, fry to quickly brown chicken.
    - Remove from pot and set aside.
    - Add more oil to pan and saute carrots, onion, peppers and garlic until tender.
    - Add chicken back to pot along with feijoas, allspice, sliced peppers and chilli kelp seasoning.
    - Bring to boil, lid, and simmer 20 minutes.
    - Thicken with corn flour if juice is too watery.
    - Serve with rice.


    Feijoa Apricot Jam

    Shopping list
    1 cup dried apricots chopped
    2 1/2 cups water
    1kg feijoas, skins on and finely sliced
    1/4 cup lemon juice
    5 cups sugar


    Method:
    - Roughly chop apricots and put into a large saucepan with water. Cook until soft.
    - Add feijoa to pot along with lemon juice and sugar.
    - Stir a few times to dissolve sugar.
    - Bring to boil and boil briskly until setting point.

    Makes 3 x 350ml jars.


    Feijoa Tarte Tatin

    Shopping list

    300g puff pastry, unrolled
    1 cup sugar
    2 tbsp water
    10 feijoas, peeled
    1 tbsp flour
    1/2 tsp mixed spice
    1/2 tsp cinnamon
    100g butter
    Creme fraiche to serve

    Method:

    - Pre-set oven to 200c.
    - You will need a 22cm ovenproof frying pan with a heavy base.
    - Roll out pastry into a circle slightly bigger than the frying pan and set aside in fridge.
    - Put half the sugar into the frying pan with the water and stir to dissolve.
    - Over a gentle heat, allow sugar to cook steadily to a light golden brown. Remove from heat.
    - To pan add feijoas, packing them in tightly.
    - Mix together remaining sugar, flour and spices and sprinkle over feijoas.
    - Fit the puff pastry circle over feijoas and place pan into oven.
    - Cook until pastry is puffed and golden.
    - Remove from oven and allow 5 minutes to cool, before turning upside down onto a flat serving plate so that the caramelised feijoas are on top.
    - Cut into wedges and serve with creme fraiche.

    Serves 6-8

    Oh, and heres some more... just cause Feijoas are THAT good.
    (and its hard to find feijoa recipes)

    Feijoa and Raspberry or Strawberry Scones
    3 cups flour
    3 tsp baking powder
    Pinch salt
    1 large tbsp brown sugar
    1 tsp mixed spice
    1 egg - mix egg into milk
    1 1/2 cups milk - fluids will depend on how much juice is in the fruits
    4 chopped and skinned feijoas
    1 cup raspberries or 1 cup of strawberries chopped
    For the topping:
    1 tbsp brown sugar
    1 tsp of mixed spice
    Method
    Sift well and combine flour, baking powder, salt and spice.
    Mix in the sugar
    Use a knife to chop and blend milk and egg
    Add the fruit
    Turn onto a floured board
    Cut scone into sections
    Top with mixed sugar and spice
    Bake at 200degC for around 10-12 minutes
    Serve with feijoa and apricot jam. Delicious!

    Feijoa and apricot jam - makes 3 cups
    1 large can of apricots - chopped, keep juice
    1kg feijoas
    1/4 cup lemon juice
    4 cups sugar - heat sugar in oven to make warm
    Clean jars with screw-top lids
    Method
    Wash feijoas and trim off flower end.
    Chop fruit without peeling.
    Into a pot, add fruit together with lemon juice and warm sugar.
    Stir a few times to dissolve sugar.
    Bring to the boil and boil briskly until a setting test is reached.
    Pack and seal into clean jars.

    Gorgeous feijoa almond cake
    80g softened butter or Olivano spread
    1/4 cup runny honey
    3 large eggs
    1 tsp vanilla essence
    1 cup feijoa puree - cut fruits in half and remove soft centre then mash
    1 cup plain flour
    1 cup wholemeal flour
    1tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1/2 cup trim milk
    1 pkt toasted slivered almonds + 1/2 cup brown sugar mixed together - for cake topping
    22 cm round cake tin - lined with baking paper
    Method
    Preheat oven to 180c
    Cream butter and honey until pale, then add eggs one at a time.
    Add vanilla essence.
    Sieve flour and wholemeal flour along with salt, baking powder and soda - add the wholemeal flour's bran back.
    Fold in fruit pulp followed by flour.
    Fold in milk.
    Spoon cake mix into tin and bake 15 minutes.
    Remove from oven and sprinkle sugar and almond mix over cake and bake a further 20 minutes or until a skewer inserted into middle of cake comes out clean.
    Serve with thick Greek yoghurt mixed through with freshly pulped feijoas.

    Feijoa and prune Indian relish
    1kg feijoas - remove flower stalk and chopped
    2 granny smith apples - chopped, leave skins on
    1 pkt pitted prunes
    1/2 pkt currents
    1/2 pkt sugared ginger - finely chopped
    2 red onions - chopped
    couple chopped garlic
    1 tbsp mustard seeds
    1 tbsp grated ginger
    1 tsp salt
    1 tsp freshly ground black pepper
    1 kg sugar
    2 tbsp molasses
    2 1/2 cups malt vinegar
    1 tsp each cayenne pepper, all spice, mixed spice
    1/2 tsp five-spice
    Method
    Bring all ingredients to the boil and simmer away about 1 hour.
    Cool then add 1 tsp citric acid.
    Then store in clean screwtop jars.

    This recipe is good Feijoa and ginger cake recipe, and I used sour cream cos' had no yoghurt in house
