    Default Cooking for One

    Being single again I find it almost impossible to cook for just me... in fact I hate to. It's so much work and so many dirty dishes just for me and it just seems like way too much trouble. So more often than not I end up eating out of a box or eating out.

    I need some good ideas of easy meals to prepare for one that are at least somewhat healthy.

    When I was single I would cook up a stirfy or something and then have the leftovers the next day either for lunch or dinner.

    Go for dishes that can be cooked in the one dish, that way you minimise the amount of dishes required.

    Umm... off the top of my head...

    Garlic Chicken with Pepper Casserole/Stew/thing (makes enough for 3/4 meals)

    300g chicken meat
    clove garlic
    herbs
    pepper
    cornflour (cornstarch?)
    one onion
    1/4 cup peas
    1/4 cup corn kernels
    one carrot
    cup water
    butter/oil

    Chop chicken into thin strips or small chunks. Crush garlic to a paste. In frypan, melt butter or add oil. Add garlic, ground pepper and chicken and fry till chicken is browned. Add herbs, sliced carrot, peas, corn and chopped onion. Add water and lower heat right down.
    Simmer for 10 minutes.

    Serve on rice or noodles or foccacia bread.
