    Default Barbecue Secrets

    I know it's "winter" for all you Southern Hemisphere folks so here's a thread to whet your appetites and get you planning for the summer.

    Now I love to barbecue, my family, not so hot on it. There's only so many times that they believe that charred flesh around an uncooked centre is haute cuisine, or "all the rage in London". Since getting a gas barbecue, I'm getting better - now mostly the meat is charred all the way through.

    But this isn't about me, it's about you - what's your favourite, or best, barbecue recipe. Are you a gas monster, or an outdoor cokemeister?

    Incidentally, has anyone tried a "Texas BBQ" where you essentially put a carcass in a big drum thing with hot coals in the bottom and leave it for about 10 hours - I was reading about these big BBQs they have over there and I'm thinking of trying it out next year.

    I once tried baking a large fish wrapped in herbs and tough leaves in a fire pit. We ate it with potatoes roasted in the same fire. It was fantastic.

    I can never get corncobs to BBQ properly, any tips?

    My favourite BBQ item (apart from steak of course) is bacon/mushroom kebabs.

    Wrap bacon around the mushrooms and cook on the grill.

    So very tasty

    Spare ribs are pretty good too. My Uncle went over to Texas and came back with a recipe for BBQ spare ribs Texas style. Damn they were good.

    I love honey soy chicken drums.....yummo
    mix about a teaspoon of honey in about 2 of soya sauce, add some herbs (don't overdo it) like rosemary and basil and marinade for a bit... then BBQ.... oh god its awesome

    I am particularly fond of barbecues. I love outdoor eating during the summer months here in the UK and I don't mind, gas, cokemeister who cares, I just love the taste of 'all' barbecues.

    Oh and do all you New Zealanders call them Barbies?

    def gas!...one with a hood. I roast in mine and use a digi thermometer for perfection!

    Fav bbq food. Chilli mussels *drool*
    Prawns ! throw another prawn on the barbie will ya'

    Chook anything and roast pork!

    cook your corn in the shuk and take them out and put sauce on them.

    Whats the point in eating corn?? It just goes straight through. I don't like it and really don't see the point in even eating it!

    We have a gas bbq with a hood, my husband bought a rotisserie to cook chicken etc on it - Soooooooo good!! ALso use it to do roast lamb.

    Heres, how i BBQ,mine, each cob, one teaspoon of butter,rub all over it,then sprinkle a little kosher salt and a little back pepper, then a little fresk tyme,spregs,wrap the corn in aluminum foil, then heat your grill to about 350 , cook for 20 mins turning every five mins, then open one and see if some are turning a bit brown, if so, its done, if not cook 5 more mins when they are done uncover,and put your favorite bbq on, then, heat for about 3 mins, should be yummo.

    For us lower hemisphere types, I think the temp would be around 180C-ish?

    A really good and easy Asian-style BBQ sauce is to mix about half and half of ketchup and hoisin sauce. Then add a bit of minced garlic, asian hot sauce, worchershire sauce and rice vinegar.
