    Question Albert Square

    Hey Guys, I really need some help. I'm trying to find a recipe for a slice called Albert Square. It's one of my dad's favourites, his mum used to make it for him. My mum also used to make it, but the recipe has been lost somewhere along the way, possibly when we moved from NZ to Australia.All I know about it is that it contains raisins and has white icing. Not much to go on, I know, but I'm hoping someone out there will find it lurking in some old recipe book!!

    How bizarre. I can't find it on Google, but am sure I have had it in the past.

    Does it happen to also contain coconut and jam?

    I'll continue my search for the elusive Albert Square recipe.

    Nothing for Albert Square Recipe, but I found an Albert Cake recipe:

    -----------
    ALBERT CAKE
    -----------

    2 oz. soft butter
    2 oz. very fine sugar
    2 oz. self-rising flour
    1 lg. egg
    Clear red jelly & a few raisins

    Line round pie tin with pastry-rolled thin and brush with
    jelly and sprinkled with raisins. Cream butter with sugar,
    add flour and egg and mix thoroughly. (Can add 1 tablespoon
    tepid water.) Fill pie crust with mixture, bake at 350
    degrees for 30 minutes. When cool, ice with confectioners'
    sugar and water icing (glaze). Add cherry to middle of cake
    or walnut.

    For Coconut Cake: Ingredients - 1 cup of coconut, 3/4 cup
    very fine sugar, 1 large egg, almond flavoring. Pie crust
    same as above. Mix dry ingredients, drop in egg and a few
    drops flavoring. Fill pastry. Bake at 350 degrees. Let
    cool.

    Ingredients

    100 grams Butter
    1 cup
    Castor Sugar
    3
    Eggs, separated
    1 tsp
    Vanilla Essence
    2 cups Self Raising Flour
    ½ cup
    Raspberry Jam
    ¾ cups
    Coconut

    Method


    1. Preheat the oven to 180ºC. Grease and line a 24cm x 30cm swiss roll tin.

    2. Beat the butter and ¼ cup castor sugar until creamy. Beat in the egg yolks and vanilla essence until well mixed.

    3. Stir in the sifted flour, spread the mixture into the prepared cake tin and spread with the raspberry jam.

    4. Whisk the egg whites until stiff and then gradually beat in the remaining castor sugar until the mixture is thick. Fold in the coconut and spread over the slice.

    5. Bake in the preheated oven for 30 minutes. Cool well before cutting into squares.

    It is elusive but my mother had it:
    4 oz butter 3/4 c sugar 1 dessertsp golden syrup
    2 eggs 1 c currants milk to mix
    2 c flour 2 tsp baking powder vanilla essence
    Cream butter and sugar and syrup then add eggs. Mix well add dry ingreds and fruit then milk to make a firm batter. Spread into tin. Bake 30 - 40 mins at 180 C. Ice with white icing and sprinkle with coconut. Enjoy. :-) Lynette

    I think this could be it!Thanks for the other recipes, guys, but there was no jam in dad's one, and he doesn't like coconut.I really appreciate the effort, and I'll let you know how it goes, I'm trying it this weekend.

    Interestingly I also went looking today on the net for this exact recipe. I don't remember jam or coconut either and this looks like the one. Had to join the site to take part in the forum. Has a basic white icing if I remember as well. I cooked in a university Hall of Residence for a few years and this was a favourite. Better on day two if my memory is still working. Bake tonight, school lunch tomorrow.

    Made Lynette's recipe yesterday - it's the one! Dad was really pleased,just like he remembered!

    I am going to be so ticked off if the recipe is in my mother's Edmond's cookbook! It took me ages to find this recipe, it can't have just been sitting there the whole time!!!

    I suppose the lesson is to always check Edmond's first. They do seem to know everything!
