| I hadn't made it for years, and so today thought I would... and boy what a disaster! and I burnt my hand in the mean time... anyway if any of you brave souls want to try it...(Curtesy of Alison Holst) 1/2 cup sugar 2 table spoons water 2 table spoons honey 25g butter put it all in the pan bring to the boil over a moderate heat without stiring, until 'hard ball stage" (When some is dropped in cold water forms a hard ball and cracks when biten into). Then you have to add a wee bit of rum OR vanilla essence and swil in the pan to mix. Then you pour it into a greased perferably non stick dish to cool, when it starts to get a bit cooler you need to start pulling the outsides to the middle. When it is cold enough to handle you need to pull and twist it out while it is cooling (not before it is cool enough to handle otherwise you'll do a Penny and burn your hand!) Then when it is almost cold, you cut it off into wee pieces using kitchen siccors or a heavy knife. Store in an air tight container (if it lasts long enough to store that is!) | ||||
