The lungs, heart, liver and other internal bits. (yumm)
The find of thing you would find in a black sausage I dare say.
I think the English are big eaters of such.

Sounds quite nice.

I lived on a farm in Oklahoma when very young. Brains and Eggs were a big favorite.

Scrapple was big.

Liver.

Tongue.

When I moved to San Francisco, after the Navy service, I began to enjoy menudo. A tripe soup. One form is red and one white. The white has hominy (a corn treated with a lye bath).

But then I was invited to breakfast early one morning and the meat with the meal was "fried" tripe. It is cooked for hours. Maybe four, in strips. Then drained over night. Then sauted (spelling probably wrong).

I am not familiar with lamb. Some pieces. But not the whole animal. Not squimish. Just not that available.

We certainly have plenty of lamb to spare here in NZ.

Tripe is something you don't hear of much now.
It was big with onions when I was a kid ( I think history goes back that far).

Tripe soup, I have to say is something I have not heard of, Menudo, great name.

If DoggyDo is the bad end of a dog, could Menudo be a similar thing ?

I have had the privelage of experiencing a traditional haggis, complete with piper and dirk, at a castle in Scotland.

A lot of fanfare for a sausage made of every bit of offal you can find, I can tell you.

haggis and neeps ( turnips i believe )with loads of pepper is luuuvly
the black sausage you refer to could be black pudding which is dried pigs blood. Its disgusting but there again theres a lot of brits who like it. Theres also a white version which in my opinion ia also vile. They tend mainly to eat fried or grilled for breakfast.
Enjoy if you can !!!
