Default Moroccan Cervena

Some of you may have noticed the welcome proliferation of cervena (chunks of venison leg-meat) in the supermarkets for a reasonable price. Something like $5.00 for a single pack, which will feed one. But I wouldn't know anything about that since I always have company. Heh heh.

All of the spices can be found a whole lot cheaper than you'd expect at Mahadeos behind the Krishna temple off New North Road (at the city end). You'll pay about 3 cents for a truckload of the stuff. Mahadeos also has a lot of other fantastic spices and curry-type things.

2x cervena packs
Plum sauce
Paprika
Ginger
Cumin
Cardamom
Rosemary

Mix the spices and plum sauce in two tablespoons of oil, and then plonk (technical term) the meat in to marinate.

Nah, forget marinating, we're hungry! Shovel the lot into a hot pan with a lid and cook on a low-ish heat. Pregnant women or the infirm should always cook venison thoroughly before consuming, although I wouldn't know anything about that either since the whole conception thing happens /after/ dinner.

When you think the meat is cooked ramp up the heat and take the lid off, reducing the sauce.

Serve with hash browns or potato medallions and some salad. Something potatoey and crunchy is essential, and the salad doesn't need a dressing as there'll be plenty of sauce from the venison.

Other options
If you're cooking together, ditch the whole marinade thing and help your date rub the powered spices into the meat. It's just like that movie with Demi Moore and the limp wristed dead guy except you can eat the vase/meat afterwards with the plum sauce lavished over the top.
