Ok and now the real way........

500grms chicken diced
1 lime
1x peice of ginger
A pot of real greek yogurt
2 cloves garlic
1 x tandoori paste
1x korma paste ( you can get these at the specialty shelves in WW)
2 TB tomatoe paste
2 TB butter
Half a cup of chopped cashews

For the Rice....

2 cups of Basmati Sticky rice
1 knob of butter
4 cups of water
Salt

Ok peeps, you dice up your chicken, and then in a large bowl you add it to the yoghurt, ginger, limes, (you need to grate the ginger), curry pastes and garlic......

Cover with cling film and leave for at the least 2 hours...

Then get your pan real hot,(with the butter) add some sliced onion, while that is going nearly see through, add your tomatoe paste and let it all mix, then just add the whole lot in your bowl, let it cook for 20 minutes then add the cashews,.......

SUBLIME!

It's an offence punishable buy a metal roling pin to make butter chicken using premade sauce.

Ingredients:

Tandoori Chicken 1 whole
Butter 50 gms
Cream 1 cup
Tomato puree 3 cups
Garam Masala Powder 2 tsp.
Red chilli powder 1 tsp.
Coriander powder 1/2 tsp.
Ginger paste 1 tsp.
Garlic paste 1 tsp.
Green chilli paste 1 tsp.
Salt to taste
Chopped green coriander leaves for garnishing

Method:

1. Take 1 whole tandoori chicken and cut it into pieces.
2. Heat half of the butter in a frying pan. Add ginger garlic and green chilli paste and saute for 1 minute. Add chicken pieces and fry until brown from all the sides. Remove and keep aside.
3. Add the remaining butter and reheat. Add tomato puree, red chilli powder, garam masala powder, coriander powder and salt. Stir well.
4. Add little water just enough to make a thick gravy and bring it to boil on high. Reduce the heat and add chicken pieces.
5. Stir gently to coat all the chicken pieces with tomato gravy. Add 1/2 cup cream and simmer for 10 minutes.

Garnish with coriander leaves and rest of the cream and serve hot.

The hardest thing about this recipe is finding the garam masala, but theres a few indian stores around Auckland that have it.

Go to Mahadeo's bulk foods just off the northern end of New North Road. They're hidden in behind the big Indian temple, which means it's populated by authentic Indians. They sell stuff like garam masala by the bucketload for cents. Cents!!!

Hello everybody
I am a new member who has just joined in.
What a coincidence, for tea this evening we had some absolutely superlicious butter chicken that I made with Hari's spices available in quite a few fruit & Vege shops in Auckland.I just followed the instruction at the back of the packaging, added some extra chilli powder as we like it spicy and it came out just beautiful. With this mix I could choose what went into my curry like lite cream etc- no more of the yucky, greasy sauces.

Cheers
CM

Got a few good recipes for Indian curry, thanks to my ex...
Dont use any of the ready made sauces you get from the supermarket.
6 pieces of chicken (skinless and cut into bite size pieces)
1 large onion (peeled and finely cut)
6 cloves garlic( peeled & crushed)
1 tsp of crushed ginger
1 1/2 tsp Corriander powder
1 tsp Cumin powder
1/2 tsp Turmeric powder
1/2 tsp hot chili powder (use less if you dont like it hot)
1 T olive oil
2 Tomatoes (diced)
1 small container of natural yoghurt(optional)
1/2 c water
Salt to taste.
Corriander leaves for garnish.
Brown Onion in oil then add the ginger & garlic...Do not burn!!!
Add all spices & tomatoes...stir & add the water...simmer until sauce has thickened.
Add the chicken stir and cover...leave to simmer on lowheat for about 30min...Once chicken is cooked add the natural yoghurt & stir...leave for about 5 min...
Garnish with fresh Corriander leaves
Serve with rice and salad.
You can also omit the chicken for beef or whatever meat you like...but you must remember that cumin powder is for red meat & corriander powder is for fish & chicken.
Also add more or less of the spice to whatever the meat you are cooking.
