He has one where a pork loin is cooked for 24 hours at about 200 degrees f or less. Then the meat just falls off for sandwiches.
There is somewhere in my db a french resturant that have sent me some recipes from their cooking school.
Simple stuff. Easy seasoning. And the result is suprisingly wonderful. I will post when I find it.
