Got a few good recipes for Indian curry, thanks to my ex...
Dont use any of the ready made sauces you get from the supermarket.
6 pieces of chicken (skinless and cut into bite size pieces)
1 large onion (peeled and finely cut)
6 cloves garlic( peeled & crushed)
1 tsp of crushed ginger
1 1/2 tsp Corriander powder
1 tsp Cumin powder
1/2 tsp Turmeric powder
1/2 tsp hot chili powder (use less if you dont like it hot)
1 T olive oil
2 Tomatoes (diced)
1 small container of natural yoghurt(optional)
1/2 c water
Salt to taste.
Corriander leaves for garnish.
Brown Onion in oil then add the ginger & garlic...Do not burn!!!
Add all spices & tomatoes...stir & add the water...simmer until sauce has thickened.
Add the chicken stir and cover...leave to simmer on lowheat for about 30min...Once chicken is cooked add the natural yoghurt & stir...leave for about 5 min...
Garnish with fresh Corriander leaves
Serve with rice and salad.
You can also omit the chicken for beef or whatever meat you like...but you must remember that cumin powder is for red meat & corriander powder is for fish & chicken.
Also add more or less of the spice to whatever the meat you are cooking.
