One of the good things about
NZ, is that you can choose to go to either north or south islands to carry out those pursuits, but if you choose to do both islands, then allow lots of time.
Sth Island does have a lot more desolate areas and hiking is excellent, with many places featuring different climate types.
Watch some tracks, as they can be only open at particular times of the year and will only allow guided hikes.
Either island will provide you with some good displays of nature.
You could jump off the Sky Tower in Auckland for the ultimate thrill I guess.
It's not truly bungee, you are lowered at a good rate of knots using a controlled mechanism, still have to be insane to jump off in the first place.
