Barbecue Secrets I know it's "winter" for all you Southern Hemisphere folks so here's a thread to whet your appetites and get you planning for the summer.
Now I love to barbecue, my family, not so hot on it. There's only so many times that they believe that charred flesh around an uncooked centre is haute cuisine, or "all the rage in London". Since getting a gas barbecue, I'm getting better - now mostly the meat is charred all the way through.
But this isn't about me, it's about you - what's your favourite, or best, barbecue recipe. Are you a gas monster, or an outdoor cokemeister?
Incidentally, has anyone tried a "Texas BBQ" where you essentially put a carcass in a big drum thing with hot coals in the bottom and leave it for about 10 hours - I was reading about these big BBQs they have over there and I'm thinking of trying it out next year. |
